But October is not only ‘spooky season’, it’s sweet potato season too – which runs from now until March.
And we have a recipe that merges the two for a ghoulish-yet-delicious dinner.
Seasonal Spuds has shared a recipe for a ‘mummified’ sweet potato, cheese and pancetta tart – with a lattice pastry top and edible eyes that resemble a terrifying mummy.
This particular no-fuss recipe, which serves eight, takes an hour and 20 minutes to prep and 45 minutes to bake. It also uses ready-rolled shortcrust pastry to save time and effort – although bonus points if you want to make yours from scratch.
There’s no denying it’s a fun choice for feeding friends and family this Halloween and it’s a good way for children to get excited about veggies.
‘Mummified’ sweet potato, cheese and pancetta tart recipe
Ingredients:
- 500g sweet potatoes, peeled and cubed into 2cm cubes
- 1 tbsp olive oil
- 1 tbsp fresh thyme leaves
- 65g pancetta
- 1 onion, thinly sliced
- 2 tsp soft light brown sugar
- 1 pack ready rolled shortcrust pastry
- 3 eggs
- 300ml double cream
- 125g cheddar, grated
- 3 slices cheddar
- A handful of sunflower seeds
