Tom Kerridge often shares stunning recipes on his social media, with some included in his book Tom Kerridge’s Lose Weight and Get Fit. This week, the chef shared an “effortless” Mediterranean salad recipe perfect for those trying to lose weight.
The chef recently shared a picture of the salad with a caption reading: “Tomato salad with chargrilled chorizo. Enough said.
“The tomatoes make all the difference. Maybe visit your local farmers’ market or go to a pick-your-own farm – unless, of course, you grow your own!”
The recipe is ideal for those who are trying to lose weight and it is included in his book Tom Kerridge’s Fresh Start, which contains healthy recipes to help you “take control” of your eating habits.
The chef explained that the “effortless dish” involves almost no cooking, “but is full of flavour and looks stunning.”
200g sourdough bread, torn into small chunks
Five tablespoons of extra-virgin olive oil
One kg ripe mixed heritage tomatoes
A pinch of caster sugar
One small red onion, thinly sliced
One tablespoon of baby capers, drained
Six artichokes in brine, drained and quartered
Two handfuls of flat-leaf parsley, leaves picked (10g)
Two tablespoons of sherry vinegar
Four picante/spicy cooking chorizo sausages, about 300g in total
Sea salt and freshly ground black pepper
The chef starts by preheating the oven to 200 degrees and lining a baking tray with baking parchment.
“Place the bread on the lined baking tray, drizzle with one tablespoon of the extra-virgin oil and sprinkle with salt and pepper.
“Bake in the oven for 10–15 minutes or until browned, tossing once halfway through cooking,” he explained.
He then cuts the tomatoes into chunks and places them in a bowl with the sugar, red onion, capers, artichokes, parsley, sherry vinegar and the remaining four tablespoons of extra-virgin olive oil. “Season generously with salt and pepper and toss everything together well,” he recommended.
The chef then proceeded to heat a griddle pan over medium heat. He sliced the chorizo and cooked the thin slices for two minutes on each side.
“Add the toasted bread chunks to the tomatoes and toss to coat in the dressing and tomato juices. Then add the griddled chorizo and toss again.
“Transfer the salad to a large, shallow serving bowl, or divide between individual bowls and serve!” the chef said.
Tom’s tomato salad is a great option for those trying to stay in good shape and follow a healthy diet plan, as it contains all the ingredients recommended by the Mediterranean diet.
The Mediterranean diet, which is considered one of the most effective meal plans, is high in vegetables, fruits, legumes, nuts, beans, cereals, grains, fish, and unsaturated fats such as olive oil.
However, those who are in a strict meal regime might want to opt for removing the sourdough bread and the chorizo, to make it even healthier.
Many fans loved Tom Kerridge’s tomato and chorizo salad with one saying “Looks amazing I made it last week, and it was super tasty.”
“And I was wondering what to do with all of the ripe tomatoes in the greenhouse! Dinner sorted!” said another one.
A third one commented: “Had it last night, the kids even ate the capers and artichokes!”
