These keto-friendly ‘sushi’ rolls are an easy, healthy lunch

Purple Potato Sushi

Ingredients:

  • sheet of nori
  • purple sweet potato, mashed
  • avocado, sliced
  • salmon, chopped
  • bell peppers, sliced
  • bacon, chopped

Instructions:

  1. Place a sheet of nori on top of a bamboo roller. Layer ingredients onto nori, and line edge of sheet with water. Roll into one long “sushi” roll. Use a sharp knife to cut sushi into 1/2-inch pieces. 

Bacon Sushi

Ingredients:

  • bacon strips
  • cream cheese
  • nuts, chopped
  • veggies of your choice

Instructions:

  1. Line a baking sheet with parchment paper and top with a cooling rack. Place bacon on top of cooling rack and bake in oven at 400° F for 11-13 minutes (you don’t want it too crispy!).
  2. While bacon is still warm, spread with cream cheese and add chopped nuts and veggies of your choice. Roll up bacon and use a toothpick to secure each roll.

Chicken Hand Roll

Ingredients:

  • sheet of nori
  • pepperoni
  • shredded chicken
  • avocado
  • bell peppers

Instructions:

  1. Place a sheet of nori on top of a bamboo roller. Layer ingredients onto nori, and line edge of sheet with water. Roll into one long “sushi” roll. Use a sharp knife to cut sushi into two hand rolls.
