Royal recipe: How to make cheesy baked eggs fit for a king

Prince Charles has often spoken of his love of food, in particular of organic food, often asking his chefs to use local produce for his meals. Personal chef to members of the Royal Family for 15 years, Darren McGrady, told food website Delish Charles insists upon produce from the grounds of Highgrove House being used to prepare meals.

Charles keeps a huge garden at the Highgrove House where he and Camilla, the Duchess of Cornwall, live.

Mr McGrady also revealed Charles is a big fan of Italian food, and mushroom risotto is one of his favourite dishes.

Now, Charles has shared a recipe to the Clarence House Instagram page of another of his favourite foods – cheesy baked eggs.

Writing on Instagram the Prince of Wales said: “One thing that undoubtedly brings many of us great comfort is good food.

“It is, therefore, deeply troubling to learn that this crisis risks destroying one of the most wonderful joys in life – British cheese!”

Charles asked his followers to source British cheese from local shops and cheesemongers to “keep small businesses afloat during the prevailing crisis”.

Giving the recipe, which can be viewed on the highlights section of the Clarence House Instagram page, Charles asked his 1.1 million followers to use organic ingredients where possible.

Organic food is a passion of Charles’, having set up Duchy Originals in 1990 principally to sell organic food products.

Now the brand is a leading organic and natural food brand and in 2010 went into partnership with Waitrose.

How to make cheesy baked eggs

Ingredients:

  • 100g wilted spinach
  • 1 cherry tomato or sundried tomatoes
  • 35g strong soft cheese, eg. Tunworth, Golden Cenarth or other strong soft cheese
  • 1 egg
  • 80ml double cream
  • 15g grated hard cheese, eg. Old Winchester
  • Fresh basil leaves – torn
  • Optional: Charcuterie

Where possible, use organic ingredients.

Method:

1. Butter a small ovenproof dish and line with wilted spinach, making a small well in the centre

2. Place the cherry tomato (quartered) or the sundried tomato (chopped) on top of the spinach

3. Dot the soft cheese around the dish amongst the tomatoes. Add the torn basil leaves.

Optional: Add any charcuterie at this point

4. Season with salt and pepper

5. Crack the egg into the centre of the spinach

6. Pour the double cream over the egg – avoid breaking the yolk

7. Sprinkle with grated hard cheese

8. Place in a hot oven (180C) for eight to 10 minutes.

9. Let it stand for a few minutes before eating

Enjoy! You can also add marmite toast soldiers – toast cut into strips – if you’d like something to dip into your eggs.
