How to make cookies – Can you make cookies without eggs?

With the UK in the second lockdown, many are starting new hobbies to pass the time. This can be trying to learn a new language, keeping fit at home or spending more time in the kitchen. With recipes aplenty online, if you’d like to improve your baking skills now is the perfect time.

With some stores running out of items, many have turned to baking to create the luxuries we would normally have.

One of these is cookies, which are versatile and can be made with a range of ingredients.

You can put oats, nuts, fruit and more into cookies, or stick to the traditional chocolate chips.

Not many ingredients are needed to make cookies, the staples being butter, eggs, sugar and plain flour.

Can I make cookies without eggs?

Eggs in baking help to create stability, thicken the mixture and add moisture to the final product.

However, if you are craving home-baked cookies and don’t have eggs, don’t worry! You can still make cookies without egg.

You can even replace the egg with golden syrup, peanut butter or mashed bananas.

Below is an egg-free chocolate chip cookie recipe

Egg-free cookie recipe

Ingredients

  • 125g butter or pure vegetable margarine – softened
  • 125g caster sugar
  • 1 tsp vanilla essence or extract
  • 200g self-raising flour
  • 1 tsp baking powder/soda
  • 1 tbsp water

Optional: 2 tbsp cocoa powder (to make it chocolate)

Optional: Milk chocolate or chocolate chips

Feel free to add in nuts, oats, fruit or any other ingredients you feel would work!

  1. Preheat the oven to 180C, 350F or gas mark four.

  2. Cream the butter and sugar together(with a wooden spoon) in a large bowl until light, fluffy and golden.

  3. Stir everything together (vanilla, flour, baking powder and chocolate chips, add the water and the Coco powder) to make the dough.

  4. Sprinkle some flour onto a surface and the dough. Roll out the dough and with cookie cutters cut out the shapes and lay them out onto greased, lined baking sheets. Spacing them well apart.

  5. Bake for about 12 minutes or until golden brown.

  6. Leave on the baking sheets for five minutes, then transfer to a wire rack to cool.

Traditional chocolate chip cookie recipe

Ingredients

  • 150g salted butter – softened
  • 80g light brown muscovado sugar
  • 80g granulated sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 225g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 200g plain chocolate chips or chunks

Feel free to add in nuts, oats, fruit or any other ingredients you feel would work!

  1. Heat the oven to 190C/fan170C/gas mark five and line two baking sheets with non-stick baking paper.

  2. Put 150g softened salted butter, 80g light brown muscovado sugar and 80g granulated sugar into a bowl and beat until creamy.

  3. Beat in two teaspoons of vanilla extract and one large egg.

  4. Sift 225g plain flour, half a teaspoon bicarbonate of soda and a quarter of a teaspoon of salt into the bowl and mix it in with a wooden spoon.

  5. Add 200g plain chocolate chips or chunks and stir well.

  6. Use a teaspoon to make small scoops of the mixture, spacing them well apart on the baking trays. This mixture should make about 30 cookies.

  7. Bake for eight to 10 mins until they are light brown on the edges and still slightly soft in the centre if you press them.

  8. Leave on the tray for a couple of mins to set and then lift onto a cooling rack.
