Home cook shares 10 minute gnocchi recipe for a quick dinner

Looking for something to whip up quickly tonight?

This courgette, bacon and olive gnocchi could be just the ticket.

The recipe comes from Australian foodie Mon Mack and it has been a hit on TikTok.

She explained that she and her sister are working from home together and she made this dish for their lunch.

‘It’s a win win situation really because I love any excuse to cook and she loves to eat,’ Mon said.

Although she makes the gnocchi herself, she says store bought works too. If you do want to make it at home though, she has a separate recipe explaining how.

Mon uses butter, onion, garlic (which can be roasted whole and then squeezed out, or just minced), bacon, courgette, tomatoes, olives, gnocchi and cream for this meal.

‘The recipe is very simple. You can smash it out in 10 minutes, super quick and easy if you want a last minute dinner idea,’ she added.


The dish is adaptable too. On her website, Mon explains that you can throw in other vegetables you have in the fridge and you can substitute the gnocchi for other pasta if you prefer.

She starts by bringing a pot of salted water to the boil and adding butter to a separate pan over a medium heat.

She then adds the onions, garlic and bacon with a pinch of salt and cooks until translucent. 

Next up, she puts the courgette in the pan, tosses and then adds tomatoes and olives.

To cook the gnocchi, cook it in the boiling water for a minute or until it floats ot the surface, then transfer to the other pan with a slotted spoon.

Finally add a few tablespoons of the gnocchi cooking water and the cream, mix until everything is coated in the sauce and serve with Parmesan cheese.
