Anthony Bourdain reveals how he was inspired to become a chef

Anthony Bourdain believed that Thanksgiving dinner should stick to tradition, and when it comes to Christmas food, that belief should perhaps also apply.

“Thanksgiving is not the time for innovation,” he wrote in Appetites: A Cookbook (2016). “Give the people what they want, and make sure it’s consistent with what they remember.”

This applies to the Christmas roast centrepiece, as well as stuffing, Brussels’ sprouts, roast potatoes and, of course, cranberry sauce.

His cranberry relish recipe is the perfect contender to prepare on a whim on Christmas Day, as it only takes 10 minutes to make.

Ingredients

  • 1 large navel orange, scrubbed and cut into 1-inch pieces
  • 12 oz fresh cranberries (about 3¼ cups)
  • 1 cup sugar

Instructions

1. In a food processor, pulse the orange with the cranberries until very finely chopped.

2. Scrape the mixture into a medium bowl and stir in the sugar, ensuring everything is well combined.

3. Cover and refrigerate until it’s almost time to serve.

4. Serve chilled or at room temperature alongside your Christmas spread and spoon over your meat of choice.

5. In a food processor, pulse the orange with the cranberries until very finely chopped.
